Peanut Banana Cookies

Ingredients
  • 6 oz. (about 170 gm) butter or margarine
  • 1.5 cups flour
  • 1 cup sugar
  • 1/2 level teaspoon of bicarbonate of soda
  • 1/2 level teaspoon of salt
  • 1/4 level teaspoon of nutmeg
  • 3/4 level teaspoon of cinnamon
  • 1 well-beaten egg
  • 1 cup of mashed ripe bananas
  • 1.75 cups of rolled oats
  • 1/2 cup of chopped peanuts
Method
  • Stir together the flour, salt, cinnamon, soda and nutmeg, then add the sugar
     
  • Rub in the butter to the mixture
     
  • Finally, add in the egg, rolled oats, peanuts and bananas and blend the whole mix together
     
  • Heat your oven to a moderate temperature and prepare a greased baking tray
     
  • Drop the mixture by the teaspoonful onto the greased tray (making sure to leave room for spreading) and bake for about 15 minutes

You can store any uneaten cookies in an airtight container or in the refrigerator, where they'll keep for several days without any problems.

Tip!
You can use a blender to mix the ingredients together if you have one. Otherwise, a large mixing bowl and wooden spoon will do the job just as well.
