Continental Peanut Meatloaf

Ingredients
  • 1lb (about 450 gm) of minced steak
  • 4 rashers of bacon
  • 1/2 cup of stuffing or seasoning
  • 1.5 cups of breadcrumbs
  • 1 tomato
  • 1 large onion
  • 2 eggs
  • 1 cup crushed, roasted peanuts
  • 1/2 cup Worcestershire sauce
  • 1.5 teaspoons of salt
  • A little pepper
Method
  • Chop the bacon and onion very finely
     
  • Cut the tomato into small pieces
     
  • Beat the eggs, and mix them into the meat
     
  • Add 1 cup of breadcrumbs and all the remaining ingredients into the meat-egg mix and blend together thoroughly
     
  • When combined, shape the mix into a loaf and coat with the rest of the breadcrumbs
     
  • Wrap the loaf in aluminium foil and place it into the loaf tin
     
  • Bake in a slow oven - 325o F or about 170o C - for around 90 minutes
     
  • Serve cold in the summer or hot in the winter

Chris says: This recipe is a summertime favourite with our family. It takes a little while to prepare but the result is absolutely delicious!

However, you can serve it hot in winter and it tastes every bit as good then too.

Tip!
If you serve this dish hot, then seasonal vegetables are good accompaniments. If served cold, this meatloaf goes really well with a fresh garden salad and a side of crusty fresh bread.
