Classic Peanut Cookies

Ingredients
  • 125gm (about 4 oz) of butter
  • 1/2 cup of brown sugar, firmly packed
  • 1 egg
  • 1/2 teaspoon of bicarbonate of soda
  • 1 cup of self-raising flour
  • 1/2 cup of rolled oats
  • 1/2 cup of coconut
  • 1/2 cup of salted peanuts
  • 1/3 cup of finely crushed cornflakes
  • Extra crushed cornflakes
Method
  • Cream the butter and sugar together until the mix is light and creamy
     
  • Add the egg the mix and beat well
     
  • Fold in the sifted flour and bicarbonate of soda. Then add the rolled oats, coconut, peanuts and cornflakes and mix well
     
  • Drop rounded teaspoonfuls of the mixture onto a lightly greased oven tray (allow room for spreading!) and sprinkle extra crushed cornflakes over the top
     
  • Bake in a moderate oven for 10 to 12 minutes, or until golden brown

Chris says: Peanut cookies are very easy to make and we always have some around the house.

These cookies will store for quite awhile in an air-tight container, and you can adjust the quantities in this recipe to produce the number you want very easily too.

Tip!
This mixture will make about 30 to 35 cookies. If you need a greater or lesser amount, vary the ingredient quantities as appropriate.
